On the first floor of a modern BMW dealership, this open-plan restaurant with a huge, glazed façade knows just how to look after our inner well-being. Robin Haquenne is a deft craftsman whose modern slant can be seen in the elegant plating and tasted in the rich flavoursome cuisine. He may have a playful approach to textures, but the attention he lavishes on the veggies and rich flavours is second to none. An example is his version of eel au vert: a subtle aspic of eel stuffed with pieces of eel is paired with slices of green apple, sweet-sour marinated endive, a tangy Granny Smith ice cream and a coulis of green vegetables. A treat for your tastebuds! Even better, they are open for breakfast.
