Karel De Stoute is located in the heart of the historic Patershol district, but the stylish interior bears a contemporary, fashionably cosy edge, depicted by a dark colour scheme, elegant mouldings and soft lighting. Chef Thomas rolls out modern, creative fare with a subtle Asian twang. In an example of his flavoursome approach, he may lacquer pigeon breast with hoisin sauce and sirop de Liège, crafting the confit legs into spring rolls to which he adds creamy salsifies and a vadouvan-laced hollandaise sauce.
