Meals are served in an arty ambience steeped in serenity, which provides the perfect foil to a banquet of unadulterated purity. Chef Vermeiren, who doesn’t hesitate to add the finishing touch right in front of diners, is committed to highlighting the ingredient with unusual combinations, that are sometimes complex, but always flavoursome. Should you order venison, for example, it is flanked by an intense spicy sauce and succulent fritters that are still handmade by mum herself.
