The lively mingling of guests and staff mirrors the bustle of Kitashinchi. The chef reads out the orders to his cooks, who rush to fulfil them. The packed menu promises the joy of many choices as only a kappo can. Pike conger in summer and pufferfish in winter are renowned fare. Eel, a popular standard, is served at lunchtime over rice in a lacquered box or in a bowl of rice topped with egg. The shop lives up to its founder’s motto: ‘Anyone, as they please, anytime’.
