Set in open countryside, surrounded by orderly rows of vineyards, a historic villa houses Fattoria Svetoni, an estate devoted to hospitality, with elegant guest rooms, and to winemaking since 1865. It is here that the restaurant finds its home, arranged partly within the evocative ancient walls of the interior and partly in a strikingly modern glazed veranda that opens onto a pleasant and verdant prospect. The cooking of Mirko Marcelli expresses itself through a creativity that is measured and never excessive: the dishes possess a strong identity without ever imposing themselves, and the pairings are distinguished by balance and coherence, each complementing the other in harmonious fashion. The menu offers three tasting journeys – Materia, Sostanza and Concentrazione (Matter, Substance and Concentration) – from which certain dishes emerge as particularly representative: the excellent ‘constructed’ artichoke, making use of every part of the vegetable, and the sheep meat, presented in an interesting and creative pairing with oysters and endive. On the subject of wine, one may place oneself confidently in the hands of a broad and well-detailed list, and in the passion of Simone, who leads the service alongside the smiling and attentive Elena.
