The Pinocchio doll on the shelf is a souvenir from the couple’s time in Italy. The chef studied cooking there, while his wife studied wine. Macallè-style risotto is a simple farmer’s dish, made more elegant with seasonings; Tokachi beef, from cows that have calved raised for this restaurant, is grilled over straw for aroma. The restaurant’s name is from the Japanese kanaderu, ‘to play an instrument’, and indeed the couple’s cuisine and wines make a beautiful harmony.
