In a lovely light space that feels as fresh as a spring morning, the former owners of Le Moulin de Ponceau (Chartres), for whom sourcing locally is deep in their DNA, wanted to get closer to nature and their suppliers. The chef cooks up colourful dishes with a contemporary twist, focusing on seafood and vegetables and often drawing on fermentation techniques.
