Here, you can discover the full virtues of Gallic cooking courtesy of young French chef Romain Lascarides, whose mantra is ‘eating nourishes the spirit, thoughts and the faculty of judgement.’ His cuisine varies with the seasons thanks to his total respect for the seasonality of ingredients and their producers.
