Anyone can throw together a fish taco, but few are willing to source grouper from Key West, grill it in a banana leaf, and pair it with a deceptively addicting hazelnut emulsion. Another recent highlight featured a superb griddled corn cake paired with crab, smoked corn sauce, and charred plantains.
