There, the duo of Claude Troisgros and Jéssica Trindade presents a fine-dining concept that celebrates French savoir-faire — most notably in the breads and their exquisitely delicate sauces — while championing Brazilian ingredients and weaving in subtle nods to the world of Japanese gastronomy. In this contemporary space, where original rice-paper lamps evoke floating clouds, everything revolves around an eight-course tasting menu or a shorter four-course option, in which guests choose the dishes they wish to try (don't miss the duck magret with heart of palm, sea purslane, tucupi — a tangy broth extracted from wild manioc — and cauliflower). The celebrated French chef, after more than 45 years living in the land of the Canarinha — as Brazil is affectionately known — confesses to being utterly captivated by its produce, much of it sourced from small local farmers, making the experience all the more singular.
