Born and raised in Uwajima, where he spent his childhood close to nature, Kohei Ikeda dreamed of becoming a chef in his youth. Influenced by his fisherman grandfather, he began by cooking fish. He cultivated the basics at a ryotei, then studied Chinese and French cuisine to broaden his culinary palate. Ingredients from Ehime feature prominently, conveying the appeal of his home region. Serving sea bream on rice, a local favourite, reflects that sentiment. Ikeda never forgets to stay true to this ‘original intention’, a phrase reflected in the name of the restaurant.
