Bib Gourmand: good quality, good value cooking
Youth, enthusiasm and unbridled creativity: chef Matéo Ravel is a real ball of energy in his trendy bistro with an open kitchen and exposed pipework. A true artisan, he cultivates relationships with a network of small-scale producers and natural winemakers. He bakes his own natural sourdough bread (it's excellent) and has mastered various fermentation techniques, which he incorporates into flavour-packed seasonal recipes: pollock white pudding with fenugreek and a Comté foam, Duroc pork loin, cauliflower and a robust grape-seed jus, or dark chocolate flan with tonka bean served warm with Piper borbonense pepper ice cream.
