At Dobler's, a veritable institution in the Quadratestadt, or "City of Squares", chef-owner Eric Schumacher's brand is classic dishes presented with finesse and pleasing simplicity. When you master your craft and have top-notch ingredients in your pantry, there is no need for gimmickry. Fine examples include "white halibut with black salsify ragout, beetroot purée, black radish and beurre blanc with vadouvan" or "pink-roasted leg of venison with parsley root purée, bay bolete mushrooms, pickled cranberries and a spiced jus". Both at lunchtime and in the evening, you can order à la carte or opt for their seasonal menu ("Jahreszeiten-Menü"). The three-course lunch deal is excellent value for money! Wine lovers will enjoy the appealing selection of around 650 wines, including rare labels such as Domaine de la Romanée-Conti. The sleek and elegant decor is in keeping with the sophisticated cuisine.
