A biodynamic wine estate on the Sussex Weald outside Rye, Tillingham has earned a Green Michelin star for a restaurant drawing almost entirely from its walled garden, surrounding farms, and Rye Harbour's daily catch. Livestock roam freely between the vines, no chemicals touch the land, and the reclaimed hop barn that now holds the 11 McCully and Crane-designed rooms is insulated with reclaimed materials to minimise energy use. A converted Dutch barn does wood-fired pizza in summer, while the bar pours the estate's characteristically flushed pinot noirs alongside inventive cocktails and homemade cider.
