What is now a 30-room boutique hotel began in 1910 as the private residence of the Jhilwara royal house, spending the decades between as a school, a nursery, and at one point a working poultry farm. Design practice Taro Studio, working between India and Italy, replaced the expected Rajasthani palette with white, grey, and sage, punctuated in the rooms by bursts of lake-blue or terracotta. The rooftop restaurant Page Break looks directly at the City Palace and serves Mewari classics alongside keema baati, a spiced mincemeat dish worth ordering for the ghee alone.
