The white shape on the noren represents the ‘tai no tai’, the small fish-shaped bone found at the base of the pectoral fin of a ‘tai’ or sea bream, cherished in Japan as a lucky charm. Counter service puts the skills of the chef, a veteran of kappo cuisine, on full display.
