Orders are placed in kaiseki fashion but varied by the mood of the day and guest preference. ‘Shinjo o hakari, ninjo wo kurau’— words from the restaurant where the chef apprenticed, serves as an exhortation to be thankful for the good fortune of providing what the diner desires.
