This small but charming restaurant in the Justicia neighbourhood is the Madrid offshoot of Corsario (located inside the Ibizan hotel La Torre del Canónigo). It dazzles both for its elegant décor and its carefully crafted cuisine, as young Cuban chef Liván Valdés serves up a Mediterranean-based cuisine that plays with local flavours and those of the Madrid mountains, skilfully combining them with other more international influences.
