Jonathan Zandbergen is a dedicated craftsman who interprets "wild" in the broadest sense. Naturally, this encompasses game from the forests of the Veluwe – you can see pheasants and ducks hanging in the ageing cabinet – but he is also mindful of overfishing in the North Sea and Wadden Sea, and champions regenerative agriculture. His reverence for his ingredients is evident in his skilful technique and the way he allows them to shine in carefully considered, elegant preparations. His cooking is precise and well defined, characterised by aromatic depth. The red mullet, grilled to succulent perfection over an open fire, paired with flash-seared squid and Wadden shrimp, all bolstered by the intensity of a jus made from heads and bones and a sakura-infused beurre blanc, is simply outstanding.
