The stripped-back, elegant interior of this ‘Rooster in the Fields’ is a masterpiece of detail. This refinement is not limited to the bright interior or the terrace by the manicured garden. Christophe Pauly, who is going from strength to strength, echoes this painstaking ethos in his open kitchen. His spot-on dishes conjure up a festival of flavours with a voluntarily concise range of ingredients as he elegantly and meticulously pursues his quest for culinary excellence. He plays with sweet and sour flavours and enhances dishes with subtle sauces. He may underscore a lightly confit, sun-drenched oxheart tomato with a cherry-laced vinaigrette, pieces of goat’s cheese and pistachio, before adding a delicate jus of green zebra tomatoes that is spiked with verbena oil and an iced quenelle of goat’s cheese. Deceptively simple recipes are the hallmark of this high-flying chef in search of culinary perfection, who avows a weakness for Condroz produce. This quest for excellence is also visible in the care with which the excellent wine list is curated.
