A Kyoto-born chef, a yakitori grill on full display from the entrance, and pared-back interiors evoking Japanese bistros: the tone is set before you sit down. One wall is devoted entirely to sake – over 150 labels, with new arrivals each week. The kitchen takes an unmistakably Eastern approach in both ingredients and technique, ranging from creative forays such as Gindara 2.0, cod with ginger and yuzu, to classics such as wagyu fillet, cooked tableside over charcoal by the guest. The true specialty, however, remains the kushiyaki: skewers of various cuts grilled over the open flame near the entrance.
