Chef Sungchul Shim is no stranger to the New York restaurant scene, but this 22-seat counter located inside Gui Steakhouse is certainly one to watch. Begin with a cocktail before riding the elevator to discover this hidden-in-plain-sight spot. The space is stunning, though all eyes are drawn to the center where the chefs prepare a multicourse menu fusing Korean flavors with French techniques. The meal begins with a bowl of luscious brown butter miso soup before wild amberjack crudo with a tableside pour of buttermilk koji sauce. The shrimp toast sandwich reveals perfectly cooked abalone nestled at its center, though the white soy custard with Osetra caviar for spooning over top is reason alone for its guest favorite status. A sesame ice cream popsicle is a delightful finale.
