The cuisine is very much in keeping with the times, Mediterranean in spirit and centred on delicious seafood. The chef also likes to age certain fish for extra depth. His command of cooking techniques is impeccable, as exemplified by an octopus dish with crisp skin and exceptionally tender flesh, served with a sauce in which tomato, pepper, bacon, onion and candied lemon zest create a rich, Mediterranean-style blend of flavours.
