Phở hà nội is inspired by northern-style pho, albeit this iteration features wagyu tartare, savory broth and a doughnut-style pastry. Salmon over king trumpet noodles in a tamarind and pineapple sauce is creative, but the best may be saved for last. Bánh Đậu Đỏ is highly creative, riffing on a cheese course with a red bean "cake" with a ribbon of cheese and a strawberry sansho sauce.
