This youthful chef isn’t lacking in ambition. In this half-timbered, red-painted 15C edifice, restored at great cost, he conjures up modern dishes packed in flavour using hand-picked produce: Arctic char from Alsace, blue lobster from Brittany, Simmental beef, Ventoux pork… Spot on service.
