Le Pré is located on the corner of Clermont-Ferrand in Durtol, at the base of the Auvergne volcanoes. Chef Xavier Beaudiment's two-Michelin-starred restaurant runs daily menus built around wild plants foraged from nearby forests and whatever the local market gardeners bring that morning; the approach is improvisational, not seasonal. The hotel has five rooms designed with environmental certifications: Green Key approved, natural materials, understated contemporary interiors. Beaudiment's cooking philosophy centers on patience and place, reflecting the volcanic landscape through a cuisine that shifts with what nature offers rather than what the calendar dictates.
