The way he continually builds on the reputation of the restaurant by working closely with the chefs is also inherited from his mentor. Hassun is arranged on platters, expressing the beauty of Japanese cuisine. Guided by the maxim ‘Challenge yourself with conviction rather than chasing trends’, the chef carries on the techniques and spirit cultivated over the years.
