The concept is a distinctly Japanese expression of Italian cuisine. Centred on recipes from southern Italy, the chef interprets them using Japanese ingredients and a free approach to technique. A year’s worth of tomato sauce is prepared using Tokyo-grown tomatoes, while mozzarella from Chiba offers a flavour unique to Japan. To expand his culinary repertoire, the chef has travelled to northern Europe and Asia. His breadth of experience brings greater refinement to regional Italian cooking.
