Sean Murray Smith, born into a family established in Montreal for several generations and originally from Ireland, rolls out a distinctive culinary score. Every evening the carte blanche menu unveils a melting pot of international influences: tartare of bluefin tuna from the Pacific on a bed of squid ink-laced arborio risotto; parmigiana of fork-tender celeriac flanked by a vegan mayonnaise and fried anchovy or a new spin on the classic Île flottante dessert.
