The experience begins in the garden, where guests can sample seasonal herbs grown on-site, grounding the meal in its sense of place. Traditional curries, flavours, and techniques are reimagined with deft precision, creativity, and harmony across each course. She remains committed to mindful gastronomy — from thoughtful local sourcing to minimising kitchen waste.
"We aim to showcase nature’s flavours by using locally sourced ingredients and herbs grown in the restaurant’s own garden. In the kitchen, food scraps are repurposed into seasonings, crab shells are reused in creative table settings, and fruit and vegetable waste is composted. We also share our practices through guided tours and collaborations with local producers, contributing to broader community awareness around mindful resource use."
