Sushi Takeda, tucked onto the third floor of Weller Court in Little Tokyo, has quickly built a devoted following around Chef Hide Takeda’s polished omakase. The chef, whose résumé includes several of the city’s top sushi counters, oversees an intimate experience centered on pristine seafood and careful technique. Guests can choose between nightly omakase seatings or opt for the more accessible lunch format, though the counter remains the ideal perch for appreciating the progression. Signature bites may include iwashi wrapped in pickled daikon with ginger and shiso, sweet kelp-cured spotted prawns or delicately sliced seasonal fish sourced from Japan.
