The jewel in the crown of this restrained, modern restaurant located just a few metres from its original venue is the impressive 20-seat walnut counter where guests can watch Mario Payán at work alongside two itamae chefs. At Kappo, which translates as “to cook”, enjoy a journey of culinary discovery across the flavours of traditional Japanese cuisine via a single Omakase menu based around a truly honest approach to cooking. The superb nigiri course (where a wild array of fish is matured in different ways) is a superb example of the exceptional quality here.
