He and his wife cheerfully welcome you to their tasteful, contemporary restaurant, which provides the perfect foil to fresh, gutsy, seasonal fare with a bistronomic slant, such as marbled parsley ham served with a tangy ravigote sauce or confit of pollock, tomatoes, basil and fennel.
