He might pair lightly seared calf’s sweetbread, sliced into escalopes, with a warm espuma of lobster sabayon, girolle mushrooms and grilled langoustine. Be forewarned: deciding between the mouthwatering à la carte and set menus is an almost heartrending exploit!
