Opposite the spot where a paulownia tree once grew, chef Geoffrey Belin and sommelier Tess Duteil – who met while working for Alain Passard – channel their passion for vegetables and top-notch produce. The space has a bistro decor featuring a large central bar, wood panelling and wooden floors, and the kitchen focuses on dishes prepared to order, using plenty of organic ingredients. The comforting dishes strike the perfect balance: "winter summer rolls", sweet-and-sour quince; tortellini with smoked scamorza, celery consommé; braised endive, grapefruit and cloves. Notably friendly service and a sense of hospitality out here in the 20th arrondissement.
