The chef came to value the history and culture of Kyoto cuisine from a stint at a restaurant in Gion. The menu is a reflection of everyone who makes Kyoto cuisine possible: the wholesalers bringing together ingredients from the regions, the farmers growing Kyoto vegetables, the potters crafting a wide variety of tableware, and more. Combinations of food and vessels express the changing faces of nature. Dashi is made with water drawn from a spring every morning. The meal ends with handmade sweets. Guests are welcomed here with dishes prepared with great care.
