From the cosy chalet vibe and the cowbells in the lavatory to the food and the delightful surprises on the wine list, everything about this place is an ode to Savoie, the homeland of chef Thibault, who runs the business with his wife Dieuwerjte. His unique signature style is shaped by authentic flavours, creative impulses and technical ingenuity, with a special emphasis on spiciness and vibrancy. For instance, the catfish comes in three intricate dishes, one of which features a fillet aged for eight weeks and marinated with miso and sourdough, accompanied by a frothy beurre blanc, parsnip purée and a sweet-and-sour vegetable chutney. Be sure to sample something from the outstanding cheese trolley! Expect Alpine cuisine with natural undertones and a focus on preparation techniques.
