The sushi at Sushi Takumi is the product of personal connections times curiosity. Tuna, a must-have for nigirizushi, is sourced from the only wholesaler with whom the chef had a personal connection when he became independent. His work draws strength from a knife set he specially ordered from a knife store in his homeland of Fukui. From the same region comes a renowned Japanese mustard, paired with sushi toppings that best complement its flavour. Each piece of sushi weaves together personal connections, skill and a far-away homeland, enclosing sincere wishes.
