This elegant wooden cabin with panoramic windows sits amongst the trees in the middle of Munkebjerg Forest. An open fire burns in one corner of the room and the well-spaced tables make for an intimate dining experience. Not only is the setting at one with nature but the menu is too, bringing the outside inside via the herbs, berries and flowers that grace the plates and the shelves. The chefs and the service team work together to tell their story – which is centred around honesty, nature and craftsmanship – through dishes such as grilled scallop with beurre blanc and creamed celeriac.
"We are focused around working with local and Danish produce, limiting our use of exotic ingredients to coffee, tea, vanilla, chocolate and lemons, all carefully sourced. We support local farmers and we centre our menu around vegetarian dishes, fish, shellfish and game. Any waste is transformed either into our snacks or through pickling, drying, fermenting and juicing."
