Dessert prix fixe menus that celebrate fruit, serving the scents of the seasons. The chef travels across Japan to visit farmers and brings back only produce she falls in love with. To draw out the best from every ingredient, she carefully considers the ideal way to slice each, and the optimal temperature range. Dishes featuring vegetables or cacao are interspersed throughout the course, their flavours lingering, helped by drink pairings that further extend the finish. Producers’ names appear on the menu, reflecting their close relationship.
