Located in a former Cistercian monastery dating back to 1442, this restaurant concocts a score tailored to today’s tastebuds. The menus draw heavily on local organic produce sourced from within a radius of 100km. In the evening, let yourself be tempted by a five- or seven-course menu, whose modern recipes have been devised with sustainability in mind and an eye on food-wine pairings. The wine list clearly has a soft spot for organic, biodynamic and natural vintages. A three- or five-course lineup is available at lunchtime. Appealing terrace on the edge of the forest, and a youthful, trendy vibe. What’s not to like?

"In our historic auberge, we think and act in a modern way but in a traditional spirit. We work seasonally with products from the Romandie and Vaud regions, our fish is from Lake Geneva, and we buy our organic vegetables, game and other meat direct. Regional wines."
