Meticulously prepared and ambitious, their original creations live up to high expectations. Fish, seafood and Asian flavour nuances take centre stage in the set menu, which is expressive, technically sophisticated and captivating. For instance, the chef grills Arctic char on the binchotan and accompanies it with a beurre blanc enriched with yellow yuzukosho for bright, spicy notes, and trout roe marinated in sake.
