In the narrow streets of the historic center, once you cross the threshold the atmosphere could not be more authentic: dining rooms with barrel-vaulted ceilings and an evocative inner courtyard, where tables find their place beneath ancient porticoes. The kitchen pursues a passionate exploration of Apulian products and recipes, interpreted with care and authenticity. Among the dishes not to be missed, the marretto di agnello stands out, prepared with offal and served with roast potatoes, but the entire menu is so inviting that choosing becomes a pleasant dilemma. Whether you are a local or visiting the region, a stop at Cibus is warmly recommended – better still with a reservation in advance, given the popularity of the house.
