Elegance and refinement run throughout the luxurious Dollenberg resort, set in an idyllic Black Forest landscape, and find their finest expression in the classically appointed fine dining restaurant. In his five- to eight-course set menu, Martin Herrmann places exceptional ingredients centre stage with precision, restraint and superb balance, while weaving in exciting modern touches. One fine example: perfectly cooked sea bass paired with tender squid rings and a fruity-tart shallot marmalade as a striking contrast, rounded off by a wonderful, lightly frothed paella broth – sauces are truly this chef's forte. The breathtaking natural scenery framed by the floor-to-ceiling windows provides a magnificent backdrop. The experience is taken up a notch by the charming, exceptionally courteous service with a personal touch. Special mention goes to Sabine Ritter and sommelier Christophe Meyer, two consummate professionals who are the face of the restaurant. The wine recommendations are spot-on, and the list itself is a serious affair – weighted towards the region and France, with some impressive rarities. Year after year, the team has upheld impeccable standards of consistency and quality. This is a family-run establishment in the best sense of the term – something that is lived and breathed here, and can be felt at every table.
