Here, young chef Satoshi Hazama offers – in addition to the à la carte menu – a 7‑course Kaiseki journey or a 4‑course tasting menu. Kaiseki cuisine employs five fundamental techniques applied to seasonal ingredients: raw, grilled, fried, boiled, and steamed, in a crescendo of intensity that showcases Japanese haute cuisine (advance reservation required).
