The concept here is ‘gastro-logic’, a neologism combining the classical Greek root ‘gastro-’, meaning ’stomach’, with ‘logos’, connoting form or law. The name is the chef’s given name, written with characters meaning ‘welcome to the dinner table’. Each time a dish arrives, it is accompanied by a card inscribed with some pearl of ‘logic’. The combination of flavour, aroma and season in each dish respects received tradition.
