In the world of fine dining, Via Ghibellina is synonymous with Enoteca Pinchiorri: the magnificent seventeenth-century palazzo that houses it is home to one of the most iconic restaurants in Italy, a true legend of gastronomy. Opened in 1972 by Annie Féolde and Giorgio Pinchiorri, what began as a modest wine shop with a kitchen has over time become a great restaurant, in which Florentine history and elegance intertwine among paintings, frescoes and vivid arrangements of fresh flowers. At the stove, the cooking aspires to a refinement free of ostentation, eschewing fleeting fashions in favour of luxurious ingredients and a profound Italian identity, its flavours at once intense and rounded, destined to linger long in the memory. A fundamental role is played by the pastry kitchen, where Francesco Federici produces extraordinary desserts, among them the indispensable soufflé. In the dining room, an impeccable crew is led by the experienced Alessandro Tomberli, a historic figure at the Enoteca. And the wine cellar?
