This is how we remember it: the chef at work behind the old-time sushi counter, in the customer’s line of sight. ‘Sushi is a traditional cuisine of Japan’, says Yuya Nishimura. True to the food culture of Osaka, which prizes freshness above all, Nishimura seeks out the finest of the catch at Kuromon Market with the eyes of a seasoned connoisseur. The ‘Yu’ in ‘Yuden’ is a Chinese character meaning ‘calm’ or ‘everlasting’. Nishimura carries on the traditions, techniques and spirit of sushi with a style indelibly his own.
