Une étoile : une cuisine d’une grande finesse
Thomas Merkle runs this long-established family business with his wife, upholding a tradition of refined hospitality in the picturesque Old Town. The Endingen-born chef expresses his attachment to the region through his use of outstanding local produce, though his cosmopolitan outlook shines through in his choice of international ingredients. The "Einfach Merkle" set menu has seven or eight courses, and also comes in a vegetarian version. The robust onion essence, earthy aromatic mushrooms, delicately sweet onion cream and black garlic is a particularly striking combination in terms of flavour intensity and sophistication. On Thursdays, you can try the shorter "First Date" set menu. Places at the chef's table can be reserved for the surprise menu on Wednesdays. Service is polished and the wine recommendations are spot on. The chef and his team come out to the tables themselves, as they value guest interaction! The attractive setting adds to the experience: a former presbytery with a stylish, minimalist interior and plenty of individual character. Lovely terrace. It is worth taking a look at the events calendar. Tip: House-made treats such as sauces, oils and salts can be purchased to enjoy at home.
