Hemlock Neversink is a wellness-focused resort with a light touch. It’s named not for what Socrates drank but for the altogether more salutary Eastern Hemlock, a tree that grows prodigiously in this corner of the Catskills. The new name came with a change of ownership, replacing the perhaps too austere New Age Health Spa with a camp-like hotel that combines Quaker-influenced design with programming that makes the most of its 230 acres of farmland and woodland.

This means not rehab but rest and relaxation: there’s a spa, a pool, and a gym, as well as art and craft classes, tennis courts, hiking trails, and even a goat barn, which opens onto a goat playground. Accommodations range from a cozy single room to the Hemlock Grand Suite, which feels more like a country residence than a camp cabin. And whatever the day may bring, guests come together for dinner at Bittersweet, which serves inventive and healthful farm-fresh fare.
